Yesterday was rainy and I just wanted to stay on the couch watching TV. But I am an adult (or so I was told) and have things to do around the house. With 2 toddlers running around, doing nothing all day doesn’t fly. 🙄🙄

But comfort food was something I could do! I bought a cabbage last week but my husband doesn’t like it so wasn’t too sure what to do with it. After scrolling through Pinterest ( very useful app), I thought… a soup!!!! Made it up on the spot and it turned out awesome!

For anyone that has doubts… I also fail often (I am talking about you stupid muffins!).

This soup is healthy and comforting. I used chicken broth but you could totally use vegetable broth to make it vegan. The white beans are full of proteins and the fact that the soup is not blended makes it a meal by itself.

I won’t lie and tell you that I eat healthy all the time… I only try. And I fail a lot. Sugar and carb cravings are strong on a daily basis, especially when I am tired. Being a full time working mom of two toddlers with a very irregular schedule means I am tired… ALL THE TIME… Cooking helps me relax and somewhat feel like I am not failing at everything in life. My kids were a disaster this morning, I think the humid overcast stormy weather affected them, but mommy being on barely 6 hours a night sleep all week didn’t help. Yet, I refused to eat crap for lunch, I can’t. Actually, I totally can but I don’t want to. So while my littlest one was having a nap, I made these zucchini boats. They are loosely based on various versions found on Pinterest (my new best friend for ideas in the kitchen). this version used what I has at home and ended up amazing!!!!! No carbs, yet, satisfying.

My food is never meant to be pretty. I cook for taste and have zero sense of design… I mean… -25% sense of design. I like to take pictures and somehow managed to make what I cook look fancy, but it’s not fancy, it’s just really good!

I am a big fan of one pot meals. Spaghetti, chili, curry, stews, love love love. This is one of my go to dishes when I have vegetables I need to use. It changes all the time but the base stays the same, it includes chickpeas and coconut milk. Simplest thing ever to make. I don’t eat my food spicy, ever, so my version is mild. Of course if you like it spicy you can change the curry powder you use.

Salmon has been on sale lately and it is one of my family’s favourite thing to eat… ever! I absolutely love salmon anytime anywhere!! lol This version comes from my parents and it’s always been something I thought was very complicated and could only be done by amazing cooks. Both chefs for many years, my parents thought me everything I know in the kitchen. From holding a knife properly to the way of using what you have to make a good meal for your family. I was very surprised when I bought salmon and asked my mom how to make their famous cured salmon. She guided me step by step and I could not believe how easy it was!! The trick is to make sure the filet’s thickness is uniform. Don’t be to cut up on actual amounts, everything is very approximate. As long as the salmon is covered completely, you will succeed. I often serve it on a piece of toasted bread with butter and some lemon juice. My dad also uses it as a topping on tagliatelle pasta made with a creamy dill sauce… to die for!

Ok peeps, I love eggs… like a lot!!!! My breakfast is always some eggs with toast…always! I try to be careful with what I eat and these little egg cups are saviours when I get hungry but it’s not lunch or dinner time yet. Very quick to make and endless combinations. You can make them with bacon, ham, broccoli, shredded zucchini, etc. Very good for a brunch or special occasion too!
