Double Chocolate Banana Bread

    My oh my! One of my most requested recipes!!! I have been making this bread for a few years now and everybody loves it. Decadent and very moist, it is a show stopper. I often make it for my colleagues and because we do not stop at my job, I cut them and wrap each piece individually in plastic wrap. It keeps the bread moist longer and it’s easy for them to grab one and go! If you find it too sweet you can decrease the amount of chocolate chips.

    Ingredients

    • 1 cup All purpose flour
    • 1 tsp. Baking powder
    • 1/2 tsp. Baking soda
    • 1/2 cup Unsalted Butter, softened
    • 1/2 cup Brown sugar
    • 2 tbsp. Cocoa powder
    • 1 tsp. Vanilla extract
    • 2 Eggs
    • 2 or 3 Banana, mashed with a fork
    • 1/4 cup Milk
    • 3/4 cup Chocolate chips

    Instructions

    1. Preheat the oven to 350 °F. Line a 23 x 13-cm (9 x 5-inch) loaf pan with a strip of parchment paper, letting it hang over both sides. Butter the other two sides.
    2. In a bowl, combine the flour, baking powder, and baking soda. Set aside.
    3. In another bowl, cream the butter with the brown sugar, cocoa powder, and vanilla with an electric mixer. Add the eggs, one at a time, and beat until smooth.
    4. On low speed, add the bananas and dry ingredients alternately with the milk. Add the chocolate and combine. Pour into the prepared pan.
    5. Bake for about 1 hour or until a toothpick inserted in the centre comes out clean but slightly topped with melted chocolate. Let cool for at least 1 h before serving (impossible mission at my house).
