Pandoro Bread Pudding

    So there it goes! My first post ever… a little nervous. Hopefully you guys like it and want to see more.

    The first recipe I wanted to share is my Pandoro Bread Pudding. I have been making it for the last 3 years and people love it. Every time I make one it ends up being a little different. Super easy and very flexible,I often make it with my older son who is now 4 years old.

    This is something I only make around the holiday season as it requires a special type of sweet bread called Pandoro. It’s an Italian bread that can easily be find in any grocery stores but only around Christmas.

    You can adjust it the way you want and measurements don’t have to be exact. I made it with a lemon Pandoro (my husband’s favourite) or with Cashew milk (for my lactose free friends). You can change it up depending on your mood!

     

    Ingredients

    • 1 Pandoro bread
    • 1 tbsp. Sugar For the bottom of the pie dish
    • 600 mL Milk Almond or Cashew milk works great
    • 1 tsp. Vanilla
    • 125 g Butter
    • 5 Eggs
    • 60 g Chocolate chips
    • 60 g Marmelade
    • For: 8 pieces
    • Preparation: 15 min
    • Cooking: 30 min
    • Ready in: 45 min

    Instructions

    1. Preheat the oven to 350°F. Lightly grease a loose-bottomed pie dish. Place 1 tablespoon of sugar in the pie dish and shake around to coat.
    2. Slice the edges off the Pandoro bread in strips and use them to line the base and sides of the pie dish, pressing down hard to compact and create a pastry-like shell.
    3. Pour the milk in a medium saucepan. Add the vanilla and butter. Simmer for 5 minutes or until the butter has melted.
    4. Meanwhile, in a large bowl, whisk the eggs. Whisking constantly, make a custard by slowly adding the hot milk mixture to the bowl until combined.
    5. Pour one-third of the custard into the base of the pie and leave to soak in for a couple of minutes. Meanwhile, cut all the remaining Pandoro into rough chunks. Place them in the custard bowl and let them soak for about 2 minutes.
    6. Pour half of the mixture in the dish. Spread half of the chocolate chips and dollops of marmalade. Pour the other half of the mixture and place the rest of the chocolate and marmalade on top.
    7. Bake for 30 minutes, or until set.
